Breakfast is an EGGcelent way to start the day. Why not try something simple yet extraordinarily delicious to get your kids EGGcited. Melissa Fossier, R.D.,L.D., a registered dietitian at Children’s Health℠, whips up a delicious recipe for egg frittatas. Using three different food groups, this recipe is EGGstra healthy and sure to satisfy your kids' hunger.
Ingredientes
3 egg whites (or ½ cup egg whites)
6 eggs
½ taza de espinaca picada
¼ cup tomatoes, chopped
1⁄4 taza de queso mozzarella
Pinch of salt, to taste
Pinch of pepper, to taste
Canola oil spray
Mezcle y combine los rellenos:

Preparación
Precaliente el horno a 350 °F.
Combine eggs and egg whites in a measuring bowl and whisk together.
Spray mini muffin tins with canola oil spray.
Add chopped veggies and cheese into each muffin tin.
Season each cup with salt and pepper.
Pour egg mixture into muffin tins.
Bake for 10-15 minutes until frittata is set and the eggs are cooked through.

Almacenamiento y vencimiento
You can store the frittata in a glass container in the refrigerator after the eggs have cooled. These will stay good for up to four days.
